DUNGENESS CRAB BEIGNETS
- 2 teaspoons baking powder
- 1/4 cup cornstarch
- 1 tablespoon kosher salt
- 1 cup all purpose flour
- 1 cup light beer of choice
- 1/2 tablespoon old bay seasoning
- 1/4 cup mascarpone
- 1/4 cup cream cheese
- 2 tablespoon chopped chive
- 7-9oz crab meat (picked & rough chop)
- 5 cups frying oil
PAIRED WITH: La Belle Promenade Vineyard Chardonnay
Step 1: Mix the dry ingredients in a bowl, then slowly pour in the beer while whisking. Make sure there are no lumps.
Step 2: In a bowl, mix the cheese, crab and chives. Season to taste. Set in a cooler for 30 minutes. Pull out and shape in 1.5oz balls, put back in the cooler for another 20+ minutes.
Step 3: Fill a deep pot with frying oil (3-5 cups should do) and heat to 375F. While it's heating, drop the balls in the beer batter and cover completely. Drop in the hot oil and stir the oil with a slotted spoon to make sure they don’t stick to the bottom. Fry until crisp and brown (3-4 minutes). Spider out the beignets and place them on a towel to dry and season with salt.
Step 4: Serve with a slice of lemon and your favorite aioli or hot sauce! Enjoy with harvest white wine of your choice, we recommend Flâneur Wine’s 2019 La Belle Promenade Vineyard Chardonnay!
