Miso Glazed Salmon with Roasted Broccolini

FOR THE SALMON:

2 pounds salmon, sliced into four filets

1/4 cup miso paste

2 Tablespoons Soy Sauce

1 Tablespoon brown sugar

1 Tablespoon rice vinegar

1 teaspoon sesame oil

Chopped green onions and sesame seeds for garnish
FOR THE BROCCOLINI

1-pound fresh broccolini

Olive oil

INSTRUCTIONS
For the salmon, preheat the oven to 375 degrees. Salt and pepper the salmon. In a small bowl add the miso paste, soy sauce, brown sugar, rice vinegar, and sesame oil. Wisk together until smooth. Reserve 1 tablespoon of marinade.
In a medium sized bowl add the salmon and the sauce. Let it marinade for 1-3 hours.
Remove the salmon from the marinade, reserving a few tablespoons. Place the salmon on a cookie sheet and surround it with broccolini. Drizzle the broccolini with olive oil and salt and pepper to taste. Bake for 12-15 minutes, or until the fish is almost done and opaque. Brush with reserved glaze and broil on high for 1-2 minutes until fish reaches 125-130 degrees in the center.
Garnish with green onions and sesame seeds if desired.
